[bump - well, I am the OP - so ...]

I found Biscoff cookies on sale at Walgreen's of all places, and thought, "wouldn't that be tasted with some Ice Cream?"
AH YUP!!
I layered crushed cookies and vanilla Ice Cream, what a home run! I knocked it outta the park with this one!!!

SO make brownies in mini muffin tins. She freezes them in 4- and 6-packs. Toss a couple of those in the microwave so they're defrosted and warm then scoop some vanilla ice cream on top. Yum.
