Tofu, English Spinach and Mushrooms

Anyone got any ideas what I can cook with this that doesn't have any meat of any sort, vegetarian night tonight :)
 
Stir fry (put on a bed of rice or noodles) or soup (buy some veg broth if total vegetarian is the goal). These are a real natural combination.
 
You could wrap the tofu and mushrooms in the spinach leaves (with your choice of seasonings) and steam them. Or bake them, esp if you can make some sort of sauce to bake them with.

Or make teriyaki tofu and serve on a bed of rice mixed with the mushrooms and spinach.

Or put the spinach and mushrooms thru a pasta with your choice of sauce or just oil and garlic. Not sure whether the tofu would go well with pasta or not.

Pizza?
 
Thought of a frittata.

Also could use the 'gredients as a great basis for a soup - maybe on the lines of a veggie hot and sour soup.
