Turkey croquettes
Anyone have a T&T recipe for turkey croquettes....made them many, many years ago, but haven't a clue as what I used besides the leftover turkey. Remember though that I used to make a good gravy, creamy I think, to go with them.....thanks in advance....HAPPY, HEALTHY NEW YEAR TO ONE AND ALL

Some mashed potatoes, egg, seasonings and bread crumbs to roll them in should work. It's been a long time since I made them too.

I make a roux of onion, butter, flour and add 1/2 milk/1/2 chix stock – add the turkey and also some leftover sweet potatoes, s & p and a little cayenne. Let chill, make balls and flour/egg wash/panko.

Turkey Croquettes
2 parts grated turkey (fully cooked) 1 part herb stuffing (crushed) 1 egg splash of liquid (as needed; stock) Mix, form small patties, fry until golden brown both sides. Serve with dipping sauce (your choice) |
