Really? I find that using fresh rice makes the fried rice seem a bit mushy... then again, maybe it's just me. I've never cooked rice in a pot. Have always depended on the good old rice cooker.
If I cook the rice by like I boil potatoes or pasta (just pour the rice into a large pot of boiling water, then drain when done) and then try to stir-fry it, it doesn’t work well. But when I cook the rice as mentioned, it works. The rice is firmer, and holds up well. Also, the key is to make sure the rice is cold before you stir-fry!
