I need a recipe to make today -
I want it to be a really lemony cookie, but it can't have these ingredients:
butter
shortening
any processed mix of any kind (cake mix, pudding mix, etc)

Anyone have anything?
Thanks so much!

Made these last week and practically had to lock them up to keep Buck out of them.

1 box lemon cake mix, 1/2 cup oil, 2 eggs, 1 cup white baking chips, 1 teaspoon freshly grated lemon rind. Mix all together and drop onto ungreased cookie sheet. Bake in preheated 350F oven for 12 to 14 minutes. Makes about 3 dozen 3-inch cookies.

The lemon rind is the key. Since you want "lemony" cookies, you might want to add more rind.

Google "Italian Lemon Cookies" and check some of the recipes out. There are some that use oil instead of butter or shortening.

Thanks guys - and yep - no mixes. I was hoping for one that was T&T. I have seen some on the internet, but the ones I've tried needed much tweaking.

anyone else?
