Presumably the stock is to intensify the flavours? All I know is that it's a tasty, winter dinner recipe.

I'm with you Ishbel, This recipe is similar to one I used to have except I used some thickly sliced potatoes that were layered with the meat etc and also some Leeks.

I find, like you, that stews are always better if a good stock is used.
 
Forequarter Chops

The stew looks great, I'd like to try it.

If you use Lamb Forequarter or "grilling chops" there is two distinct halves (the fat is on the top bit) that can be easily separated with a knife.

If you can get mutton chops it will give a much more flavorsome result!
