hello

when i travelled in mexico, i loved sampling the many wonderful sauces that were placed on the table. even though food was often similar, the sauces were invariably, different. does anyone know a book that specializes in Mexican Sauces. Note that i already have books by Kennedy, Balyless so i am not looking fro general books on Mexican cuisine.

thanks

A general book on chili peppers might help as the one I have deals with a lot of sauces. I also have a book titled "Hot and Spicy Mexican" that offers quite a few sauces. I have never seen anything totally devoted to Mexican sauces. The biggest problem is the ability to find locale specific chilis as most are only sold in the (Mexican) states they are grown in. Susan Feniger (sp) and Mary Sue Miliken (sp) of "Two Hot Tamales" fame have several cookbooks with sauce recipes.
