A 10 inch will do fine, but suggest you go for a larger one as I think that the results will deem larger quanities of food being place on the plate. I have done cakes, cookies, breads, meats of many types, ect. I think you will enjoy this type of cooking very well.
The type of tools I use depends on how much cleanup I want to do. A roll of foil, couple oranges, and a couple of onions can make some great utensils. That is foil packs with vegetables, Hamburger cooked in Orange peel, and last but not least Eggs cooked in onion peel.

The rule that I always went by in placing coals on and around oven is 1/3 under and 2/3 on top. The quanities you have I agree. One more thing on placing coals never place directly underneath. Good Luck, Coalcookin:cool:
