Well I didn't know to let the rice sit for 30 minutes to 2 hours first. I only use calrose rice, rinse it off first, and let it sit for 15 minutes after I cook it. What are the water to rice ratio then since i don't think that i am using enough water.

I know that the noodles look like linguine noodles and they use soy sauce. I live in FL so there is a high Japanese steakhouse demand. I'm not sure what else they use or if the soy sauce is diluted.
when you roll it through the cutters make sure that you flour both sides and it won't stick. The excess flour will then rince off in the water when you cook it.
Gossie I have an imperia and absolutly love it. The spaghetti and fetuccini cutters are seperate so if you want to just roll the dough and not use the cutters it makes it easier. Plus imperia has all different attachments so the possibilities are endless.

I lay the pasta on wax paper with a little flour sprinkled down first. Then I turn it whenever i pass by and leave it out to dry for about 48 hours. Then bag it up in a freezer bag and you should be good to go
I love the hibatchi noodles that japanese restaurants make. I was wondering what kind of noodles they use and how to prepare it. I have tried with fettachini(can't spell today) and soy sauce but it never tastes like the restaurants. Please help I love these things.:chef:
