    Someone explained it on this forum before. When I commented not to use Sunflower Oil in baking 'cuz it turns the baked goods a very unappealing shade of green.

    Rotisserie Chicken thoughts?

    To me, even better than rotisserie chicken is an oven roasted chicken, IF you can find a Roaster chicken. Generally 6+ pounds. They are older and have so much flavor. But, they can be hard to find. I guess the chicken places would rather produce Fryers since they are younger?

    Finally got around to making Cheese & Onion Enchiladas. They go into the oven, soon. We'll have them with some Restaurant Style rice and freezer Refried beans. Yum!

    Cheese and onion are my very favorite. Up here, they charge $1.75 to add the flippin' onions! What's up with that? My homemade are better anyway. I made tacos last night and taco salads the night before....but I'm seeing enchiladas in the near future!
