I have a bag of coconut of sugar in my pantry. I bought it about 6 months ago, I have used once or twice. We don't use a lot of sugar in our home, but if I need it is there. I'd rather use coconut sugar or honey or maple syrup. Than regular sugar. It is IMO a good alternative.

Quinoa is a great sub for rice. Roasted carrots and brussle sprout are wonderful with it. How about a kale and cannellini bean soup. super easy and filling.
Was planning on baked eggs with roasted asparagus and Parmesan cheese. Unfortunately hubby got called into work.
So I decided on a boiled egg topped it with a little butter and a couple slices of bacon made in Foreman grill.
