Also the person that im making the cake for has asked for chocolate fudge cake on all 3 tiers would this be a good idea? if so does any one have a good recipe?

Im making a wedding cake with 3 tiers I have 6, 9 and 12inch tins all are 5 inchs deep I am trying to find the best way get an even bake as there is alot of mixture, does anyone know the best way to do this?
