    Hard Anodized Cookware

I have a glass cooktop range. Hard anodized cookware warps when I heat it up. That means the bottom of the pans only make contact at the point of the warp. That causes very uneven cooking, hotspots and generally poor results. I only use cookware that has a disk bottom. Even my AllClad warps.

    Manpans - any recommendations?

My experience with my smooth top electric range is that unless a pan has an encapsulated bottom it won't make full contact with the glass top. I had several hard anodized pans and they all warped enough after heating that they spun around on the glass top. Manpans don't appear to have...

    Copying recipes

There is a Firefox plug-in called Recipefox. I use it in conjunction with MasterCook to automatically capture recipes and import them into MasterCook. For websites that don't work in Recipefox (and many don't, but not enough to keep me from using it), it has a cut and paste feature that...

    Spaghetti Squash

I use spaghetti squash several times a month. My SO doesn't like it so I usually quarter the squash and do a slightly large single portion. I do mine in the MW. I use high and do 6 minutes per pound. Do the math for lighter pieces of squash. I place the piece flesh side down in a small...

Can't get lens cover off oven light bulb

My hands aren't strong enough to twist off the lens cover on the oven light bulb. I think I might have seen a "strap wrench" somewhere in a catalog that might assist my hands. Anyone have any suggestions before I try to buy one? Lee

    So what's cooking 10/23/10?

We play pinochle with another couple tonight so we are doing sandwiches, corned beef, ham, provolone and american cheeses. I made the KFC copycat coleslaw, BBQ macaroni salad, roasted chile guacamole with chips, and a small quantity (first time I tried it) of sweet potato salad. Lee

    Pampered Chef stone

I had a PC stone for years but it finally cracked. Instead of shelling $20 for another I paid $1.67 for an unglazed saltillo tile at home depot. It's about 12 inches square and I keep it on the bottom of my oven all the time. Every now and then I make a pizza and put the pizza directly on the...

    Signs of Autumn

Here in Tucson the nighttime temps are around 50-58 degrees. Very few trees here change colors unless you travel up the mountains. The vegetables I tried to grow during the summer are showing signs of life. Lee

    ATK and Cook's Country

I subscribe to Cook's Illustrated on the web and dropped my hard copy subscription. I don't care for Kimball think he comes off as a snob. However I learn a lot from the show and will continue to watch both ATK and Cook's Country.

    Eggplant

I often dice some eggplant and lightly fry (evoo) it together with bean sprouts, onions and garlic.

One piece to rule them all

I have a glass stovetop and tried using Calphalon hard anodized skillets and pans and found that they warp to the point that they spin with just the barest touch. I've sold them and now use Cuisinart products that have an encapsulated disk in the bottom. They don't spin and maintain contact with...
