    Janet - I've frozen homemade cheesecakes before and they were still in great shape when I defrosted them, so I would imagine you'd be okay freezing your cream cheese. You may want to divide it into several chunks before freezing, though!

    Using the "bake" setting in your oven rather than the "convection" setting might also help, because the air blowing around in a convection oven can sometimes dry out the top of the cheesecake, which can lead to cracking as the cheesecake cools and settles.

    Jabbur's idea with the chicken patty in a hamburger bun is an easy but great one! I have a crispy chicken sandwich recipe that I love - especially because of the smoky sauce & dill pickle chips that go along with it. We always make a double dose of the sauce because it disappears so fast!
