    Chocolate with the right cocoa content.

    I have this recipe for chocolate souffle which requires 50-55% cocoa chocolate. All I could find was 70% chocolate. How can I make the chocolate 55% cocoa? Can I mix it with something? Maybe even water? Or should I just use it as it is or would it make the recipe too 'cocoay?' Many thanks!
