SPAIN - any particular dishes I should try?

Did someone say SPAIN?? YUM! As it has been said, it depends on where you go. Like URMANIAC, I also lived in coastal (SW) Aldalusia for four years in the mid-late 80s. Since we were a fishing town, fresh fish and seafood was widely available. In central Spain I have had wonderful roast leg...

SCOTLAND ... Any Scots on DC?

I was there from April 75 to May 80. I was stationed at Edzell Base (RAF Edzell) during those years. My #2 & #3 were born in Montrose and #1 was born in Dundee. If your family was in the military stationed at Edzell, there's a site specifically for us. If you'd like more info, email me at...

Corazon, I lived in Montrose, Brechin, Fern and Edzell. Three of my four kids were born in Scotland: two in Montrose, one in Dundee. Ciao,

SCOTLAND ... Any Scots on DC?

I went to Scotland once in 1975... I returned to US in 1980. At that point I had lived there more than 1/5th of my life. Cheerio just now,

MD - Solomans and Snow Hill ... our Chesapeak Bay road trip

My wife and I managed to find two little gems during our recent weeklong "Around the Chesapeake Bay" trip in Maryland. The first, CD Café, is located in an unassuming building in the town of Solomans. (I found out about it in the Yellow Pages.) The chefs are adept with both local and...

    VA - Christiansburg?

Anybody in this area? Some family members of a friend of mine are moving to that area. They'd love a heads up on good eats in the vicinity. Ciao,

Easiest/quickest way to strain homemade chicken or beef stock

Use a pasta insert One easy way is to make your stock using a pasta cooker insert. When you lift the pasta basket out of the stockpot, the large pieces come right up and out. Ciao,

ISO Japanese fusion restaurant menu steak offering idea

You're asking the wrong people this question. If you're in a restaurant, you should be "asking" your customers. Do folks in your area tend to favor one or over the other? Did you mention the marinade because it's what you like or what your customers like? For the most part the people you're...

    VA - Virginia Beach?

I'm dragging this out of the cellar because I got a copy of Hampton Roads Magazine when I was in Newport News a bit ago. The Top 10 Hampton Roads Restaurants are: 1. Stove, The Restaurant, Portsmouth 2. Fat Canary, Williamsburg 3. Vintage Tavern, Suffolk 4. Vintage Kitchen, Norfolk 5...

NC - Outer Banks Area eateries?

Update on Lone Cedars I was just at the Outer Banks this past weekend (Oct 6th). Lone Cedar is back up and running. It appears to be larger than ever. The place was packed when I drove by. Ciao,

NC - Outer Banks Area eateries?

Lone Cedars (Revisited) For those who didn't know and do care, Lone Cedars burnt to the ground at the beginning of the summer season. This past week I received an email from JWU alumni association that Lone Cedars was ready to hire after the rebuild. There wasn't an expected startup date, but...

    VA - Virginia Beach?

Not VB and not quite Ghent, but... Garlic, If you haven't tried them, give Luna Maya (2000 Colonial Ave) a shot. The sisters, Karla and Vivian, originally opened on Aragona Blvd in VB back in the mid-late 90s when I still lived there. I was pretty much a fixture when I was sous chef of Zia...

    VA - Virginia Beach?

I go to VB occasionally. Gus & George's is still there. Hey! They even repaved their meager parking lot. (I'd be willing to bet that piece of property is high value now that Towne Centre is thriving.) There used to be another steakhouse near Kellam Rd, Longbranch, I think was their name...

How do you clean that amber glue like build up from a fryer?

Empty your fryer, allow to cool enough to work in it. Do a proper boil out, drain, cool some more. Then use a good ole "green pad" and hot water and elbow grease to finish it off. Rinse thoroughly with fresh water, drain, dry and refill with your oil. It's not glorious, but it sure works...
