    Taste of Thai

    Say Thai food, I think of spciy, sour, fresh, sugar, fish sauce and chilis, lemongrass, coconut milk, spicy salads, galangal and tom yum paste.

    I've always had Som Tom made with green papaya. My buddy made some som tom with jicama yesterday, that worked really well.

    Thai Tea

    In Thailand they sell and already mix bag of tea that has a mix of tea leaves, coloring and spices but no sugar. That's boiled, strained and then mixed with sweet and condensed milk. The preparation would be the same as Chai Tea.

    Smoked Salt

    Try making your own. Make a solution of water and liquid smoke. Mix it with some salt you like, should be wet like beach sand. Then dry it out in your oven or microwave. Then you have the salt you like and can make it as smokey as you want.

    Polenta Technique

    Double Boiler Try Just tossing all your ingredients into a bowl and cook it over a double boiler until you have the cosistancy you're looking for.
