    Griswold vs. Lodge Cast Iron

WE had some Griswold when I was growing up. I seem to remember that it was a little lighter than Lodge, but that may not be right. We did have a chicken fryer that was nice and deep and very large. I should never have let my sister take it!

    Whats Your Favorite Casserole?

Looooooooooong time ago, I was travelling with several other students and we were to stay at the house of one of us. His mother had no idea when we would show up, but she had dinner well in hand: Meatballs were made and browned ahead of time so she just warmed them up. Then she cooked a...

What's your favorite small kitchen gadget?

They are called china caps because they resemble (or at least someone thought so) the conical hats worn by Chinese peasants. Commercial kitchens depend on them.

    How to transport Italian Sausages?

Some of our grocery stores around here have dry ice. Freeze the stuff and put the dry ice on top. Ten hours should be no problem if it is all packed well.

    cooking Sherry?

Gosh, it is a real shame that one does not see sherry in miniature bottles. It does keep for a good while once opened and you might find other uses for it. Try deglazing a meat pan with it and cooking most all of the alcohol out as you make a sauce. Some sherry bottlers used to sell half...

    Healthy comfort food? Possible?

There is nothing inherently unhealthy about pancakes, or mac & cheese, or spaghetti. What you have to watch out for is eating them and nothing else, or eating too much of them. It sounds to me that guilt is the problem and not food. Relax and enjoy a comforting meal and read a good book or...

Please help - Cream Cheese question

I think that cream cheese has less fat than butter and since neufchatel has 1/3 less fat than cream cheese, I have used it as a butter substitute on toast, etc. Add just a little bit of preserves, etc. and it is not bad.

How do I make chicken nuggets?

I think that Mc D's nuggets are a patented combo of white meat, extraneous chicken stuff and commercial hype. This is very hard to reproduce. Why not try making beef nuggets out of old shoe soles: Tenderize in Cuisinart, shape with a cookie cutter made from old car parts, deep fry with lots...
