I have kept them for months in the freezer. It might help also to freeze the cookies in a log and then slice them as you need them. There is less surface that is exposed to air.

Hi, If the chocolate is properly tempered, any mold will work well. I mostly use the hard polycarbonate ones (hard plastic). Do not refrigerate the mold, this might cause condensation on the chocolate and cause blooming.

IT also helps to have the egg whites at room temperature.
