    Two hot tips

Frying potatoes in goose / duck fat (or roasting) was a big fad a couple of years ago here when Jamie Oliver suggested it on a Sainsburys ad. I find it too cloying though. In my opinion you can't beat roasting potatoes in olive oil (not to mention being better for you I'd imagine). The stock...

This may or may not be news to you established gourmands but I wanted to post based on my recent personal experience. 1 - Potatoes in Chicken Stock If you're boiling, roasting, par-boiling, mashing or whatever - cook your potatoes in chicken stock. The flavour is just outstanding. My...

Totally inspired by this, so making pork souvlaki tonight. Just got back from supermarket (where, incidentally Jamie Oliver was filming his latest Sainsbury's ad! If I don't end up on the cutting room floor, I'm the scruffy guy in shorts slurping a Starbucks Iced Caffe Latte!). I digress -...

Salmon with lemon pasta and broccoli

Thanks for the warning there. Funny though - I've seen cookery programs over here where they've told you to heat a frying pan for a good 20 minutes before using! Now that's excessive, but I only meant heat until very hot. As with all things - common sense rules :chef:

Salmon with lemon pasta and broccoli

Thought I'd share what we had for dinner last night - it was a huge hit with DW! Salmon with lemon pasta and broccoli I bought two really nice pieces of organic salmon for this. I used the chunkier fillets from the middle of the fish. The rest of the ingredients was: Linguine (or spag or...

What type of person are you?

My wife and I spent a long weekend in Barcelona one year for our weedyverse. On the last night we went to a real nice restaurant and one particular dish caught my eye - translated into English it was pigs trotter in some kind of sauce. "Yeah - that sounds cool" says I - and I order it while...

What's on your table tonight? Nov. 8th

Tonight started out as just grilled chicken and salad, but I somehow managed to turn it into a multi-dish Indian feast! Today's dinner, Tuesday 30 Oct 07

Lamb chops. Probably with crushed, herby pots and a huge bag of spinach. I also have 1 single fillet of trout that I'm looking for inspiration on what to do with it! Might just lightly fry it with some pancetta and have it as a starter.

    Today's dinner, Monday 29th October 07

Chicken Satay. I was shown a local Chinese food distributer / wholesaler yesterday that also sells to the public (no need to buy bulk either). Wow, what a fantastic place! It's literally on my doorstep and I never knew about it. There was just tons and tons of different stuff from the...

    Sunday dinner-Oct. 29, 07

Had roast pork (crackling came out like flubber though ) with roast pots, cabbage and leeks. Made a simple apple sauce to go with it (well, just an apple lightly poached in water). The crackling thing really annoys me - sometimes it comes out great, other times it's just soggy. I know...
