    Jamaican Jerk Sauce

Does anyone have a really great jerk sauce recipe? Tried a pile of the ones available on the 'net, but none stand up. G.

    Cast Iron Teapot Help

All of those 'old' rules about not cleaning a teapot, seasoning a teapot, and only ever brewing one type of tea in it--- they are only valid with a pot that has an unglazed ceramic interior. If the inside is glazed (read smooth and shiny) then you can clean it on occasion with soap and water...

For your Knife - what cutting board do you use?

I have 20 or so cutting boards-- wood, plastic (colour coded for different uses), bamboo, a new composite paper board that is dishwasher safe! I never use glass, (why would you do that to your knives?) and since my counters and island are concrete I always keep a flexi plastic board down on one...

    Excess pumpkin

I cook (bake) it, then portion it for pie and freeze it. Pie all winter... But I have to say the best pumpkin pie is made from acorn or butternut squash. G.

    Eating off the bone...

I love gnawing on the bone, at home and in public. One of the local chefs -at a very high end resto- encourages the bone gnawing / sucking as "that's where the flavour is". On the topic of Marrow... My local butcher makes 'marrow butter' - a mixture of marrow, butter, and herbs, that you place...

    President's Choice knives

There are a few smaller US grocery retailers that carry Presidents choice food products, Harris Teeter in North Carolina carried them for a while. One thing that I have learned about knives is: If it fits well in your hand, you are comfortable using it, and you can keep it sharp, then it is a...

    Dinner tonight, Saturday, November 10

Grilled turkey legs, with the last of the swiss chard from the garden (getting cold here in Canada), probably top that up with beets, potato, and squash... also from my garden. Since Christmas is coming, I'll also make the first pannetone of the season this afternoon as well---> need to get in...

ISO inexpensive good-quality rubber spatulas in Toronto

Have you tried Hendricks kitchen supply? or Nella, or Nikolou (queen & bathurst). All supply the trade, and are less expensive than the stores that supply the at home "gourmet chef". G.

    Pizza Stone Life Expectancy

I keep mine, no name - good and heavy & cheap ($5 CDN) in a cabinet beside the oven--> and when the self cleaning cycle goes on the stone goes in. Never had a problem with the stone breaking or my house burning down. G.

    Barbeque vs Grilling

Lump charcoal is the only way to go... However on screen we use gas half the time, just because the camera is rolling and we are under that time constraint thing. Those briquettes have never entered my yard. G.

    Looking for Charcoal

Here in Canada... the 'Evil Empire' (wal & despot) haven't yet completely killed the smaller chain and independant hardware stores where customer service is a one on one affair, and they have these things year round. In fact if my local doesn't have lump charcoal on hand mid-winter, they will...

    KitchenAid mixers

I love my KA mixer, it has pride of place in my kitchen and I use it often... However over time I have found that lots of what I was doing in the mixer I actually enjoyed more doing it 'by hand', and slowing down to enjoy the process without the noise. Still if it broke down I would replace it...

    Who Likes Beer?

I just did a story on 'Innis & Gunn" in Edinburgh Scotland. They make the most incredible oak aged beer; my new favourite! The beer was originaly made to "flavour" the oak casks, then dumped down the drain before the casks were filled with whisky. The owners realised that the guys on the shop...

    Mead, fermentation

I have a 12 year old mead in the basement that is sooo smooth... First (and best) batch that I ever made, unfortunately my notes from that year suck and the apiary where I bought the honey closed. The last few bottles are now savoured with special meals, and will be sorely missed when gone. G.

    The Coffee Thread!

There is also a green bean supplier in Toronto, that will ship everywhere: The Merchants of Green Coffee (I'm new member so I can't post the link). We are shooting segments with them right now on beans, roasting and brewing. These should be up by mid-December... lots of info, about a little...

So many great variations! In the end one for every taste and household, this is another one of those scenarios where there is no "one right answer". G.
