    My goose is cooking.

Cooking your Goose Chef June - that is a wild goose that does not have any where near the fat of a store bought goose. They have to fly for a living. These are also nothing like plucking a chicken, which I used to do for my grandmother back in the dark ages when people raised chickens. Wild...

    The Perfect Steak

I have the solution to year round grilling Hey Fanatic - I too grill year round, even in the rain if it holds off long enough to get the coals going. :chef: Any way the solution is to move to sunny Southern California. It may be expensive but I do not think it is to high a price to be able...

What brand of tequila do you like?

Mas Tequila There is a great difference in Tequila's. Some are made for mixing (jose cuervo) and others are made for sipping. Tres Hermanos is my favorite, 100% blue agave and aged in oak barrels. As in Whiskey aging makes a big difference. Not sure if it is still true but back in the Dark...

one more cook for the soup :chef: Looks like there is a million ideas on this so I will add my turkey to the conversation. I do the brining, using an ice chest left outside in the shed overnight. Then I stuff the bird, old family recipe that is cooked before stuffing. Then I fire up my Weber...

I need a new charcoal grill

Best Charcoal Grill My wife, bless her heart, bought me a Weber Ranch Kettle. It is about the same price you are looking at for your other grill. I have used this for everything including smoking ribs, steaks, Jamaican jerk chicken. It is huge and you can control temperature by the same...

    New BBQ with fire box

Mesquite Charcoal Randal, that mesquite charcoal burns HOT AND FAST. I use it to grill steaks with. Look for the Cowboy charcoal at Home Depot. It seems to be a summer thing with them. I could not find it there until May. Also for smoke wood, they had bags of Hickory chunks. Almond is a...

    Favorite Hotdog Brand

May sound crazy but I get Hebrew National Kosher Beef hot dogs from Costco, almost as good as the ones from my kid days. Those were made by a local german butcher who made all of his own sausages. If you can find them I don't think you will be disappointed.

    Sourdough Starter

Thank you for the recipe, I like the one with the grapes seems like it would yield more flavor. One more thing, I always remember my dad putting leftover starter in a glass jar then placing in the refrigerator. When he wanted to use it he would add flour the night before, take out some starter...

    ISO your favorite barbecue sauce

Best Homemade Sauce for Me` I found this on the Food TV network page. It is a little bit of work but WOW is it good. I use different chili powders depending on how hot I want it. Good with Ancho Chile, New Mexico Chile, and especially with Chipotle powder. Try it you'll like it. :chef...

I seriously cannot grill a steak without destroying it!

I Luv Steak Wow cooking a good steak past medium is going to make it tougher. The longer you cook it the tighter the steak fibers get. Also a 1" thick steak should not take to long to cook. The biggest problem is gas burners are not all the same and some cook hotter than others. Some...

    Dreaded creosote layer

 I listened to someone who told me smoking with walnut wood was good. NOT GOOD. My new smoker is covered with creosote and the meat was bitter. Any suggestions on getting rid of the creosote layer?
