Cool D/O table I bought one of these on eBay last week. It's probably the coolest Dutch oven table I've seen yet

    Mountainman Breakfast...Again.

We were camping over New Year's with our Airstream unit and had MM Bkfst for the first time. It was made with an ostrich egg and they added some green chile to it too. It was served on tortillas with some salsa. Needless to say it was delicious! I've been thinking about doing Dutch oven for a...

    Chili Verde?

We drove through Hatch NM (Chile Capitol of the World) yesterday on our way back from Tucson. There were several roadside stands that were selling ristras and other chile products. I bought a big bag of dried red pods and three packages of whole green chiles that were roasted and frozen from...

What's for dinner, Monday Jan 5th

We're having a white trash chicken casserole that a neighbor sent over and a loaf of 3-cheese bread that I have rising right now.

    Chili Verde?

Chile verde = green chile. Green chile is the cornerstone of New Mexican cuisine. Google "green chile" and you'll get an abundance of information, recipes and sources. Here in New Mexico, green chiles are roasted and frozen for use throughout the year. They are used in stews, soups...

    Marie Callender's pot pies

Marie C also makes a really good frozen pie crust. I usually keep a couple of them in the freezer at all times. Her chicken pot pies are really good but I like to make my own too.

Polenta vs Grits, is it the same thing?

Absolutely! It might also be really good with spinach too.

Polenta vs Grits, is it the same thing?

Well - your opinion is really worth more than just 2 cents! I always enjoy hearing what others have to say! On the few occasions that I've had grits they were generally served with breakfast. My partner makes cheese grits that are really good. It's just a matter of adding some grated cheddar...

Polenta vs Grits, is it the same thing?

LOL - Nope! No inferences about grits at all! I'm Italian and I'm a polenta kind of guy. I know nothing about grits other than than that one of the colors that they come in is white. I'm open to learning more about them though. If you like kale, try the recipe I posted. It's delicious! Cheers!

Polenta vs Grits, is it the same thing?

About Polenta I'm not going to get into a discussion about girts vs. polenta but I want to clarify a couple of inaccurate statements made here about polenta. In an earlier message it was stated that polenta is yellow and grits are white. True - but there is also white polenta. Moretti makes...

    Paella recipes anyone?

Paella Salad Here's a recipe that I developed a while back. This isn't a traditional paella - it's a delicious salad - served chilled - that makes a complete summertime meal (or any time of year for that matter). It uses Orzo pasta instead of rice and has all of the good things found in many...

    My macaroni and cheese recipe

Sounds like the cream cheese might give it a rich creaminess. I may try that the next time I make mac and cheese.

Many thanks for the warm welcome! It's funny hearing (seeing) the term welcome to DC. I spent most of my life in DC before moving to New Mexico. I love that city! Jim

What's for Dinner, Sunday Dec. 28th!

Lee your recipe looks great - I'm going to try it in the oven the next time I make it. Your recipe also saves the effort of pounding out the meat to tenderize it and you can even use a more economical cut too. Your oven method is also perfect for doing when we're out in our Airstream. Many...
