    Pizza Dough problem

I was getting regular enriched flour and it wasn't working very well. I switched to flour for bread machines, which had a higher protein content and gave it a good working over for about 30 minutes and it made a big difference. I switched to a smaller pie, going: 2 1/2 cups bread flour 2...

    Pizza Dough problem

Thank you, I'll put a little more work into the kneading. I don't have a processor, or anything like that so it's all me. I probably took it too easy on the dough. Great quote by the way, the Sagan one I mean.

    Pizza Dough problem

Hi everyone, I'm making pizza from scratch and having a bit of a problem. The pizza comes out well and tastes good, but it's a bit thick, and thick on the crust. My recipe is: 3 1/2 cup flour 1 1/4 cup water 2 1/2 tsp yeast 1 tsp salt 1 tbsp sugar (I use to start up the yeast) I let the...

    What size dutch oven

I just bought a 3.5 quart Martha Stewart (I hate myself for admitting that, but it was the cheapest I could find and seemed like nicer quality) It's enough for what I want now. I had a 6 quart, and it was heavy and hard to move in and out of the stove. (wife got it in divorce) Anyway, I love...

    Garlic Bread - and intro

I'm not an expert, but I think you'll get something different than you want the way you're talking. If you want garlic bread I'd bake up the dough like bread. If you bought it cooled I'd put it in your baking pan, or on a stone and cover it and let it try to rise for an hour. Then I'd bake it...

    Roast beef....Help!

I'd sear it first in a cast iron pan if you can. Then I'd bake it at 250ish for a few hours in stock.

How do you learn to cook?

I think you start by copying a dish you like. For me it was baked ziti that got me going. Then I wanted to try bread because I love fresh bread. Then that got me to different kinds of breads, and then to cookies and pastries a bit. I liked what someone said about the cooking network. I watch...

    black specs in cornmeal

They sound like flour weevils to me, but I'm not a bug expert. If they were in your pasta it might be the same thing. I don't know what do to about it. I'm divorced and single so I have room and keep everything in the fridge that's open.

Favorite and Least Favorite Food Network Stars

My favorite by far is Elton, but I'm new to cooking altogether. I like Emeril's personality, but the last few shows he skips over some of the information I need to cook his dishes. I like Giada too, and not for the non-cooking stuff.

I need to eat in and don't know how to cook

I don't know how to cook either, but I'm starting to get the hang of it. What I did was to grab a few recipes for food that I like and then adjust them to make them better. My first meal was Baked Ziti It's very simple, the timing isn't critical and there's good leftovers.
