    Defrosting Fish

Thanks for the many replies... the consensus seems to be cold water, fridge, or a combination of the two, which seems fairly easy to handle. Some on this thread have said 'fairly quickly' with the cold water method. How long are we talking? Obviously it depends on the amount of fish etc etc...

    Defrosting Fish

I'm curious what people think is the most effective way to defrost frozen fish (mostly the vacuum packed cheap stuff, not like a fresh fish that i caught and scaled). I'm trying to get more fish and healthy meats into my diet but fresh fish is so expensive. I feel like frozen fish fillets...

Omelette - Butter vs Cooking Spray

Basically... butter = better flavor. Got it. I always did feel funny spraying down my pan with (what felt like) a can of spray paint. Thanks all!

    The Essential Grocery List

Hi! Does anyone have a short-list of their grocery essentials --13 or so items that they must have in their house to cook? I don't mean like cereal and milk and bread, b/c those things are super basic and you don't cook those. I mean more like certain vegetables, meats, and such that are the...

Omelette - Butter vs Cooking Spray

I wanted to know from anyone who is particularly good with omelettes: I used to see the cooks at omelette bars using cooking spray to grease their pans, so I started to do that too. But I've also been reading a number of recipes that call for the use of butter to grease the pan instead. Does...

    Sauce with Chicken Broth

No I haven't. Do you have a good recipe for it?

    Sauce with Chicken Broth

Ok well after reading some of these tips. Here's what I did: Sauteed garlic, butter and shrimp first. Mixed tbsp corn starch with chicken broth and a splash, which I added to the shrimp. Let that get hot/simmer off a bit. In the end, it was a thicker consistency (which is good), but it tasted...

    Sauce with Chicken Broth

Hi. I'm looking for a recipe for making a pasta sauce that involves chicken broth. Essentially, I'm looking for an alternative to the regular tomato sauce etc etc that I usually do. I've tried sauce recipes in the past but they always come out runny and don't really "stick" to the pasta. Any...

    ISO Pasta and Shrimp

Wyogal: I was considering sautee'ing the shrimp with garlic and then adding it to the tomato sauce. Can you expand on the white wine/chicken stock idea?

    ISO Pasta and Shrimp

Anybody out there have a good recipe involving pasta (any kind) and shrimp? I'm hoping someone has a good one that involves tomato sauce and the shrimp, if something like that exists out there. Also, (not that it really matters) I currently have in my pantry penne, whole wheat spaghetti, and...

    Sautee/Stir Fry/Skillet Cook

Is there an official definition or way of separating the cooking techniques of sautee, stir-frying, and skillet cooking? It seems like all 3 are just cooking things in a skillet. Is there a particular ingredient/method that defines each particular cooking style?

Oh, also. Anything you guys like to add to make your eggs perfect? I've been making egg whites with tabasco sauce, basil, black pepper and sometimes cheese. Anyone else?

    Cooking Eggs

Great tips from everyone. Goodweed - I'll definitely try making those fried eggs. Never though about adding water before. Wyogal - I've seen omlettes being made exactly as you described at omelette bars, but never new the exact steps they were taking to make the eggs. I'll give it a shot. I've...

    Cooking Eggs

Does anyone have a good tip for me about cooking eggs/omlettes? I can cook eggs just fine on their own, but i have trouble when i try and keep eggs from falling apart (ex. sunny side up). Any suggestions in terms of how high to turn up the heat or sprays or technique? Thanks!

    ISO Broccoli

What's the best way to cut up broccoli stalks? I don't want to waste it, but after taking off the rind i don't know of a way to make it look presentable. Ideas?

    Across the grain?

Just to let everyone know. The dinner was a hit. Everything stir-fryed came out well. The broccoli took in more of the tabasco sauce than anything else, so biting into one of those florets was like a little kick every time. Thanks for the help.

    Improve this recipe!

Oh, I have another question: So I've been cooking broccoli a lot, either stir frying or steaming it or however. I can make good use of the florets, but I wanted to know if there was a good way to cut the stem to make it edible/presentable? I want to use the stem so I can make better use of the...

Wow guys, all great tips. With the limited items that I have, I thought onions would be an easy addition and a good choice. If I had some garlic handy i'd definitely do that, guess I have to add that to the shopping list. I'm going to be cooking this in a few minutes (waiting for the rice to...
