Chicken and sauces that go with it ... and other tips and tricks

One of my son's favorites is Balsamic chicken. Brown your chicken breasts in a little olive oil until just cooked through. Sometimes I throw in some chopped onion, sometimes not. Then put in about a 1/3 cup of good balsamic vinegar and a can of STEWED tomatoes. This is for 4 chicken breasts...

    ISO Chicken Stock help/advice

I would probably worry about using the raw stuff that's been sitting in the fridge for a few days, so maybe fry it up a bit in a tiny bit of butter in the pan you're going to make the stock in. Then when you add the water it will deglaze the pan a bit and add some more flavor to your stock...

    ISO Christmas Dinner suggestions

What about Rock Cornish hens? They're really just little chickens but you could probably do something really elegant with them. Maybe some roasted root vegetables and some great bread. And serve it on your best dishes with candle-light and all the fanfare you can come up with. It's not really...

    Favorite Holiday Drink(s)-alcoholic/non-alcoholic

I love egg nog too. Try it warmed up with a generous shot of rum in it. Warms ya right up on a cold night!! I've also made a punch for Christmas breakfast - I mix equal parts of Cranberry juice (or Cran-cherry, Cran-raspberry), Cranberry Gingerale and Pineapple juice for the kids and then...

    ISO Christmas "No-Bake" Treats

@Tinlizzie - I'd love to have the No-bake Fuitcake recipe if you're willing to share. No snarky comments here. My mom makes a baked fruitcake that's actually more nuts than fruit but she leaves out the citron - that's what makes it bitter sometimes. We're probably a minority but I like...

    Burnt hunk-o-meat

My kids love what we call "Grandpa's Surprise". With a leftover pot roast my grandpa would melt some butter, fry some onion in it and add chopped cooked pot roast, potatoes and carrots. Kind of a pot roast hash. If you can chop the meat pretty small, this may make it a bit more tender. Add a...

    ISO Christmas "No-Bake" Treats

I am new to the forum but I'm hoping some of you can help me. I just moved and my oven is old, very small, and does not bake evenly at all. I am also without a microwave at the moment. They are being replaced - on DECEMBER 26TH!!! I usually do A LOT of holiday baking, but this year it's...

    What to do with buttermilk

I haven't tried it but a friend of mine freezes milk. She has a large freezer but not a big fridge and she lives out in the boondocks so she bulk shops. Freezing the milk keeps her from having to run to the store every other day for milk for her 5 kids!!! I don't know if it would work with the...
