    What's cooking Monday March 1, 2010?

    My husband is having a pork chop with roasted red potatoes and green beans. I'm on a two day cleansing fast...blah! I go on a fast and first thing I do is come to a cooking site - makes sense, right?? Lol.

    Freezing Veggie Lasagna?

    Yup, bake it first. When I freeze regular lasagna made with noodles I typically freeze it prior to cooking, but in this case I would cook it first due to, as Andy said, the moisture factor of the vegetables.

    Ina Garten's Apple Tart

    I haven't made this yet, but I am a HUGE Ina fan. I think she is simply amazing. The suggestion of leaving about an inch around the edge makes sense. I'm glad I found this thread so now I can go look up the recipe and I know what the trick is :)

    Mexican Madness Casserole

    I could eat Mexican every night and be a very happy camper! Thanks for sharing this recipe - it looks delicious and easy. Perfect for a weeknight dinner.

    Good value, inexpensive mandoline?

    A Japanese mandoline for $40 - darn, that's not bad. I have considered getting one, but then I question how much I would really use it. "I've made it this far without one" ends up being my attitude. Plus, I do the same thing as ya'll and use my box grater.

    White asparagus?

    I'm with Danpeikes - roasting asparagus really brings out their awesome flavor. I put them on a baking sheet, drizzle with olive oil, season with s&p, and pop 'em in the oven at about 400 for, oh, maybe 6 to 8 minutes. They don't take long and they are soooo good.
