    Burrito

I've been making beef and bean burritos for a while now BUT I've swiched to using ground turkey instead of the beef for health reasons. 1/2 to 3/4 pound lean ground beef or ground turkey 3/4 cup finely chopped onion 2 cloves garlic, crushed 1 Tablespoon chili powder (good with a little...

    How to make Broccoli delicious?

How about tossing with olive oil, some red pepper flakes and even a little crushed fresh garlic and roasting it in the oven? Roasted broccoli and cauliflower are really excellent.

    Peanut butter and jelly

I would only add that peanut butter is healthy IF you eat natural peanut butter with NO hydrogenated oils/fats...the processed stuff is pretty bad. One of the best things you can do is eliminate all hydrogenated oils/fats from your diet and processed peanut butters have tons of them, mostly.

    Marinated Breasts - Chicken Fajitas?

It may be too late now, but do you have access to a grill at this time of year? (I live in FL so we grill year-round, but I know of some die-hard folks who keep a path to their grill shoveled no matter what the weather!) To me, any fajita meat tastes best grilled.

Used pre-marinated meat for the first time!

The marinated meats at our supermarkets are mostly pork tenderloins (the brand is Hormel) and if you read the ingredients, there are a ton of chemicals in the marinades...so I generally stay away from them.

    Chocolate chip cookie question...

You can test your baking powder by adding a teaspoon to a glass of room temp or warm water...if it fizzes or bubbles, it's still fresh.

    Munchies recipes needed

In addition to fruits/veggies, low-fat Triscuits with natural peanut butter are great and only 2 or 3 are quite filling. Almonds are good too if you want something crunchy; maybe some low-fat granola would work for you also.

    What to do with cauliflower?

Have you heard of Cauliflower Popcorn? You basically remove core and tough stems and cut up the florets into appx. size of popcorn, then toss with 3 Tbsp. of olive oil and 2 teaspoons salt...roast in a 450 degree oven in shallow roasting pan for about 45-50 minutes, turning/stirring the pieces...

    Fish Sauce

Yes, do buy some but be careful that it does not have a bunch of weird ingredients; read the label before purchasing. I try to think of it like anchovies...I know I don't like them but they do add tremendous and distinctive flavor to many sauces.

    Smoked Salmon question.

There's nothing like a bagel, toasted, smeared with cream cheese, topped with smoked salmon, chopped capers (drained) and finely chopped red onion, truly a mind-blowing combination. Never had it til 2 years ago when our son made us a quick appetizer while I was banging pots n' pans around...

    Good and bad fats

Here's what I think: Americans in general eat WAY TOO large portions...and processed foods. My dad died of colon cancer so I try to maintain a low-fat, high-fiber diet at the recommendation of physician (my last cholesterol count was 125) but yeah, I'm due for a colonoscopy in 2 years. Folks...

Stuffed Chicken Breasts? Calling All Chefs!

Whoa! I don't like pounding chicken breasts out, either! No matter what I do, there is always a tear in the meat somewhere and after using all that energy pounding the breast, I'll be d***** if the result is poor...so I've adapted to cutting a pocket in the breast horizontally also! I've had...

Fish recipes for people who don't like fish

You might try this recipe from Epicurious for Honey-Ginger Salmon...pretty spicy if you increase the chipotle chiles -- no fat and I'm thinking very low sodium but it may depend on what brand of hoisin sauce you buy. I usually make extra sauce and put it over rice; I line my baking pan with...

    Gall bladder problems

Yes, yes, yes...ask your doctor, no, TELL your doctor to "be more specific!" Ask for print-out of guidelines for what you should and should not eat; also, is this doctor also your obstetrician? If not, she or he should be "in the loop" as to your gall bladder problem during pregnancy. It never...

    Ginger Tea Recipe

When I worked at a health food store a few years ago, the manager would bring us a cup of tea at 4 p.m. (she was from Barbados, British influenced) and it was always ginger tea. Now, I keep it in the house, especially for when I catch a cold..it's great with lemon too. I believe ginger is widely...

    Oven BBQ Chicken

I usually season the skinless chicken pieces with Tony Chachere's Cajun/Creole Seasoning, bake them at 375 for about 30 minutes and then pour/brush on the barbeque sauce and finish baking for 15 minutes. Most barbeque sauces have a lot of sugar in them and it can burn & get all dried out if you...
