    What's for dinner Friday, 1/13/06?

    Chicken breasts rolled in cheese cracker crumbs and stuffed with cream cheese, and a slice of cheddar sprinkled with crushed red pepper flakes. Then baked with a sauce of diced tomatoes, cream, pepper and green onions. Roasted red potatoes with rosemary and olive oil.

    Anyone know beans about beans?

    How about onions? I don't think they're considered "acidic", right? I usually add those and garlic when I put them on to cook in the crockpot. It does take several hours...I have hard water though, so I just allow for plenty of time.

    Snow peas

    I do mine in stir-fry also! except I use their cousin, sugar snap peas. I also put in cubed chicken, habanero peppers, cashews, purple onion, and a dash each of soy sauce, honey, and caribbean jerk seasoning. If I have them at hand, I like to also toss in squash or zucchini. Then I spoon it over...

    I do often fix stuff like this for my friends/family! I don't mind in the least taking a long time over it, I find cooking very soothing...but tonight it's for a girlfriend I haven't seen in a while.
