    Fish Sauce

Oh no please don't do that. Fish sauce is almost like balsamic vinegar so it last a long time in a dry cool place. This is the one time I can't imagine how cold pressed something will taste, not good at all. That's like putting olive oil in the fridge. Fish sauce is really cheap so even if you...

    Marinating fish?

I do this at least once a week and found this to be the best way for salmon, trout, red snapper, cat fish and it's very easy and quick. After you wash your choice of fish, put it a bowl or container. Then drizzle about a tsp of balsamic vinegar, tsp of olive oil, some red wine or sherry vinegar...

I just recently froze a bunch of turkey soup from thanksgiving that had pasta egg noodles in it and it does come out very mushy after defrost. Next time I would prob make the noodles extra al dente before freezing

Smash Burger on Fox news today - Taboo method???

The owner and founder of Smash Burgers was on my local Fox news this morning proudly showing off his new company as most promising according to Forbes. That's great for them and I can't wait to try their burgers but the burning question isn't that sacrilege what they do with the burger during...

Which Celebrity TV Chef is actually the BEST CHEF?

Gordon is not just a tv chef, he is an accomplished chef with highly respected restaurants in the us and europe like Puck and charlie trotter. Ok so you don't have cable or directv..do you have internet? try you tube and watch a little of his show the F word and I think you'll get a glimse of...

Which Celebrity TV Chef is actually the BEST CHEF?

then what is? I never sd anything about having a tv show as proof, I was just merely replying to gourmet greg saying he's never Gordon on any tv shows... and how is top chef or iron chef contrived? it may not be to you but it's a pretty fair measure of one's ability.

Which Celebrity TV Chef is actually the BEST CHEF?

n Seems like you don't have BBC channel. His show F word shows him plenty in action in his restaurant and at home. He also has several travel series kinda like No reservations where he goes to vietnam, india, etc and visits local chefs to learn their national dish and then has to re-create them...

Marcel’s Quantum Kitchen to debut on SyFy channel....

+1,..too much smoke and mirrors. And I just have no interest in these molecular gastronomy cuisine like that Jose Andres. I can't stand that guy and his pretentious minions of robot chefs. He makes it as though the common eater doesn't have any idea what we're missing out on and that food should...

    Bitchin' Kitchen

The problem for me is that she goes overboard and tries too hard and be some court jester instead of focusing on the food which aren't that great and most of her recipes are kinda weird. She has the right idea in sprucing things up but she needs to show some restraint and tone it down some and...

What cooking/foodie shows make you get up and cook or go eat?

I love them all.... but the Food Paradise series like pizza, steaks, diners, breakfast, etc makes me want to drive an hour to Orange county and try my bookmarks on Yelp. And The Best Thing I ever Ate is lovely too. :pig:

Which Celebrity TV Chef is actually the BEST CHEF?

You know what's really interesting is all the votes for Ramsey which I don't deny but y'all notice that he doesn't put himself out there on Iron chef or top chef? to me it's like he's somewhat insecure and doesn't feel the confidence to compete with the best or maybe he's just one of those that...

The Best Thing I Ever Ate...Really?

That's very true. Most folks at home watching tv don't cook and the networks fully aware of that and therefore will produce shows that will get them to eat out at least and help the food industry. And even with cooking shows they are choosing the ones that are exciting or have some showmanship...

The Best Thing I Ever Ate...Really?

I like the show and maybe it should be called " my favorite thing to eat" instead so it there's no controversy. Keep in mind most of what they think as the best thing they've eaten are nostalgia memories of what their childhood upbringing was like. For instance a big time iron chef like bobby...

    Fish Sauce

Since no one has mentioned a brand yet and if you're like that one starring at all the choices I highly recommend the one with 3 crabs. It's at most places that sells fish sauce and I think I've seen it at albertsons or Ralphs in Asian isle. If you can't find that, the Squid brand is almost as...

Help wanted for making hash brown potatoes golden

God I love hash browns but it's almost impossible to make them from scratch because when I try to wring out the moisture then they get all crushed then when you fry it it just breaks up and disintegrate into almost nothing. I really don't want to buy it frozen because I rather have "fresh" from...

Question for chefs or food experts in properly freezing meats and poultry

The washing part if fine, is the freezing right after part I just wasn't sure about because the extra moisture and unnecessary more handling breeds more bacteria. And I just think it's redundant and would prefer to wash after defrosting and prior to cooking.

Question for chefs or food experts in properly freezing meats and poultry

Thanks everyone for the warm hospitality.. For the record I would never ever wash a good piece of steak or beef. It's mainly the infamous oinkster, fish, and chicken which are always in the news for semonella or some food related poisoning. And if y'all watch food network or just about any...

Question for chefs or food experts in properly freezing meats and poultry

In cooking school did they teach how to properly store meats and poultry and freezing them? Should you wash beef, pork, or chicken before you freeze? my aunt does this all the time and I don't think it's right. I've tried to google it but it doesn't say if it it's harmful to wash before freezing...
