    I am another soup fiend. I love using puréed root veggies and squashes to make thick, hearty soups like butternut apple, or roasted beet and turnip. I tend to make more potato dishes, like shepherds pie and of course there's always home made Mac and cheese, the queen of comfort food.

    Ever had potato stuffed hot dogs? Yeah. Hubby makes the, a couple times a year as a treat. Slice hot dog almost in half the long way, top with leftover mashed potatoes and shredded cheddar cheese. Bake until warmed thru and toasty brown. And no, it's not healthy. :P
