What's in your lunchbox this week? (2/26)

A big lunch for my man who's pulling an all-nighter : ) It's a lot of deep fried stuff, because we just got a new deep fryer and I was itching to try it : ) I made the rolls with what I had laying around, so it's mostly chicken and cabbage. The apple was a test, I thought if I dipped it in...

What's in your lunchbox this week? (2/19)

I thought this might get a little less popular than the dinner thread, so maybe one thread a week will be enough. So what are you all eating for lunch? If you're packing a cute lunchbox, feel encouraged to post pictures : ) It will give the rest of us some inspiration! It's so hard to think of...

    Soboro gohan

This is a rice bowl with sweet chicken and sweeter eggs on top. It looks pretty ordinary but it's delicious, and it's also easy and ready in 20 minutes. The recipe makes three big bowls or four small ones. Rice - I use about 1 1/2 cups (uncooked) of sushi rice. Chicken - The original recipe...

    What's wrong with my oven?

Ok, it might not be the oven, I must be doing something wrong  Meat just doesn't seem to ever get cooked in my house! I always worry about meat being undercooked so I've been using thermometers. Well, I can never follow the time directions on recipes anymore, it takes me at least twice as...

Your twist on chicken pot pie?

I've always had chicken pot pie prepared in the same way : chicken, a can of mixed vegetables, bechamel sauce. It gets old. How do you tweak yours?

    Cooking spray question

I used to cook with oil a lot, but I'm watchin my figure : P So I've mostly switched to cooking spray, but I still use olive oil to roast things like garlic and onion, cause I'm worried about the results with the spray. Can you actually roast garlic with just spray? Or would it just go from warm...

FL - Miami ... Ginger Grove

We had to go to Miami on short notice last week, so we picked a nice hotel to spend one night. We went to the Mayfair, beautiful place, japan-themed, with a hot tub on each (private) balcony... great stuff. Well, the reason we picked that place was because of their restaurant, the Ginger Grove...

    Green onion slime

Is there a trick to get that goo out of a green onion? Nothing grosses me out more than when I start slicing one and all that sticky stuff leaks out. You know what I mean? It looks like a gel. I don't know why sometimes it's there and sometimes it isn't... I end up ruining the onion in my effort...

Duck with peaches - need help

Last time I cooked a whole duck, I tried a recipe that I randomly found on the internet. It was to die for. I've lost the recipe since, and it doesn't seem to want to resurface. I *think* I remember that the glaze called for brown sugar, the juice from canned peaches and white wine, and the...

    Diet math

How many of you actually do count your calories and sugars and fat intake? How does that work? Doesn't it drive you insane? I just saw a diet menu for 1000 calories, that actually said "don't deprive yourself that much too often or you'll get sick." I'm so very lost!

    Turnovers / strudels

Does anyone have a good dough recipe for turnovers or strudels? I like the pillsbury turnovers but they get kind of old. If I make them myself, I can have flakier dough and a filling that's not 90% syrup :chef:

    Frozen banana pie

I had this dessert at easter, and it was wonderful. Seemed pretty simple to make, too. It was a frozen pie, though I can't see why it wouldn't work if kept in the fridge... It had a graham cracker crust, a vanilla pudding based custard, one layer of sliced bananas and whipped cream on top. I'm...

What do you like to eat when it's really hot outside? Key West is getting suffocating and I haven't felt like cooking anything at all!

    Ham leftovers

I don't have much in the fridge at the moment so I'm starting to get stuff out of the freezer. I cooked a big spiral ham not so long ago, and I'm thawing half of it right now. I really don't know what I'm gonna do with it... the only thing I ever do with ham is glaze a slice. Well, that and...

Wanted: bread & butter pickle recipe

My hubby & his mother love bread & butter pickles! We buy the jars and eat all the pickles, and then keep the juice to pickle hard boiled eggs. I think TJ would put just about anything in that bread & butter thing. They've asked me to find them the recipe, can you help? I'm looking forward to...

    Fish on the grill

We're having company over and TJ wants to grill. I plan on making snapper with a garlic sauce, seasoned chicken and some rice and vegetables. I was thinking of cooking the fish on the grill, wrapped in tin foil like I would do in the oven, do you think that would work? They are all small filets...

    Snapper - need variations

I went fishing not long ago and we caught lots and lots of snapper! It's all in my fridge, and I need to start eating it. It's just two of us here and we brought back 20 pretty big fish, I'm telling you, I was up all night filet-ing fish... Anyway, I'll need ideas on how to vary the taste...

    Easy and delicious coconut rice

Whenever I cook asian type food, I like to serve this rice with it. It's so easy: when cooking the rice, just replace the water with the same amount of coconut milk. I like to get the kind that is a little sweet. Works just as well with jasmine rice, uncle ben's or sushi rice. A more elaborate...

    Easter Sunday dinner

Are you all too busy eating chocolate to make a dinner thread tonight? I completely forgot it was Easter today, and we had a dinner planned at my mother-in-laws. Luckily, I happened to go over there to bring her some macaroons we made too much of. Dinner was delicious! We had a juicy turkey...

    Xenadrine EFX

Well, my husband wants to start taking Xenadrine. From what I understand, he thinks he needs it not so much to lose weight as much as getting the energy and motivation to actually get to the gym. He is an active guy by nature, but he's going through some rough times  He used to work out a...

    Bitter eggplant

I've had a craving for an eggplant sandwich for a week, so I went and bought myself a nice eggplant today. I've never actually used eggplants in anything, but I do like to eat it in restaurant dishes. There must be a trick to it though, because my sandwich came out very bitter! All I did was...

Do you ever intentionally skip meals?

It's a bad habit, but I get self-conscious when my husband eats less than I do, so on his work days I tend to skip lunch. By dinner time, I feel so miserable. He sometimes doesn't eat his dinner before 3 in the morning, if at all. If I don't eat every four hours, I start to feel faint.

    Ranch dip

Does anyone have a tried and true ranch dip recipe? I'm trying to reproduce a dipping sauce for conch fritter that is ranch-based, so I need a good base to start with or I would just get lost in the adjustements.
