Friday 8/25/2017 What's on the menu?

Unless he's having a side of gay people, something other than what comes to my mind.

This should be a good place for you.

    Thursday 8/24/2017 What's for dinner?

I just went out in the rain and ruthlessly chopped down my trying-to-bolt basil. Tonight's dinner will be steamed broccoli, pesto topped pasta, and a seared pork chop that I sous vided and froze last week.

    Thursday 8/24/2017 What's for dinner?

Yup, two bad floods, which just kept us at home, and one horrible hurricane that caused more water damage at the in-laws 18th story condo than our ground floor apartment. They built our house in the 60s, when they knew how to build high enough the water would wash around but not into. I"m...

    Thursday 8/24/2017 What's for dinner?

Thanks, JC, so far it's not too bad, just a bit of light rain. The map looks good, too, it's the talk of the storm stalling and dumping on us for days that has me worried. We've done it before, full gas tanks and ready to buy ice! I just wish we could send some of this rain your direction.

    Favorite store-bought condiment?

Btw, do Texans eat cornbread with their q, and if so, is it Northern style (sweet), or Southern (not sweet)? Sweetpea, corn bread is never sweet! Neither are baked beans. And there are never beans in the chili. After 30 years here, I'm still enough of a Yankee to find that all horrible.

    Favorite store-bought condiment?

For store bought condiments, I'd say Dijon mustard, grainy or smooth, and Major Grey Chutney. If you count maple syrup as a condiment, that for sure. I love maple flavor, and use it instead of honey in any recipe.

    Favorite store-bought condiment?

Don't toss them, send them to me! Hellmans was my fav until I tried Duke's. I will never go back.

    Thursday 8/24/2017 What's for dinner?

Getting ready for the great storm Harvey, a day after getting home from the eclipse. Water chilling in the fridge, tonight is a simple keilbasa and cabbage. Tomorrow will be whatever we can scrounge in the fridge, in anticipation of losing power.

Thursday 8/17/2017 What's on the plate?

I'd be tempted to drop in on MsMofet. I had a veggie stir-fry, since I need to clean out the fridge before the looong weekend. I mean, we only have 80% coverage here, so we must drive 12 hours to see the eclipse at 100%, don't you know! I just hope it isn't the zoo that Oregon looks like...

    Pomegranate Molasses

Well, CharlieD, I"ve never eaten one that tasted good, and man, they are a lot of work. Maybe I just don't like them, maybe only bad ones are available, but no thanks. I've made my own syrup from juice (see above), and that's quite good, but it has a lot of added sugar.

    Whatcha Makin? 8-11-17

Forget the gubmint, sell this to those people making big bucks off the personal protection devices! That is scary, I wonder what happened.

What have you had for breakfast lately?

Left over shrimp scampi with angel hair. Did I mention I don't like breakfast foods?

    Meatloaf

I usually lightly pack the raw meat into a loaf pan, then turn it out onto a rack in the baking pan. That way, you get more of the crust. I also like to glaze it before it's done cooking.

    Whatcha Makin? 8-11-17

Today it was waffles (Annie Frankenstein's Amazingly Good ones) with sliced strawberries for breakfast; dinner was Shrimp Scampi over linguini. I have to say that just yesterday I had resolved to start trying a Plant-Based diet. I guess I meant I'd start on Monday.

What are your two favorite kitchen appliances?

I bought these gloves same time I bought my new mandolin. I stuck a carrot down one finger and tried to slice it. Not even a knick. My first mandolin I cut off a finger tip too, which is why I made this a dual buy.

Thursday, 8/3/2017, are you grillin and chillin?

We used to go out to the clubs, and a bit after midnight we'd roll into diners for a snack. Our go-to would be to check out the ceiling tiles, no burn marks meant no saganaki, and we'd leave for a better place. Opa!

    Semi-Homemade Lazy Meals

The Semi-homemade is a good idea, ruined by the stupid show. I tend to freeze my own fruit, meat, stock, etc. On a given day I can pull pesto and pasta, chicken salad, or a blt together based on items out of the freezer.

What are your two favorite kitchen appliances?

My two fav, since I assume an oven, cook top and dishwasher are a given, are my stick blender and my sous vide immersion tank.

2017 Edition - What are you baking?

I just finished a menu of Sous Vide salmon, cooked to perfection than ice shocked, than broiled with homemade teriyaki sauce, very quickly. Accompanied with steamed broccoli. This afternoon, I'll be trying out homemade goat cheese (also sous vide last night, quick and easy) stuffed...

Thursday 7/20/2017 What's on the plate?

Sous Vide I can't find a separate thread, so here goes. I'm going to do a SV rump roast, 130 for 24 hours. Today I salted it and wrapped it, tomorrow I'll start the cook. Yup, 48 hours of thought goes into this. I haven't gotten used to this, but I'm working on it. So Monday, they're be...

What's pho your dinner Friday, 7-21-2017?

I did Sous Vide stuffed burgers, on brioche buns. Stuffed with sharp cheddar, buns from a local bakery, slider sized. A side salad of romaine and strawberries, with toasted pecans and ramen noodles, which was quite the departure for me, and worked out well.

Wednesday, 7/19/2017, what's on your plate?

I've been eating a bit high on the red meat/cholesterol wagon lately, so today is a nice healthy salad for dinner. Romaine, strawberries, homemade croutons and dressing. The interesting twist is sauted crushed ramen noodles and pecans to sprinkle on top..

    Vacuum Sealers Rock

I have one because of my sous vide cooking addiction, but they are wonderful for any sort of freezing.

    What is your "house" bread?

I keep a few slices of Wonder Bread around for one reason only--it's the only thing to use for genuwine, sliced American Cheese Product grilled cheese sandwiches. Sometimes, you just need one of those.
