Easter Sunday here and tonight we are having roast lamb, roast potatoes, roast kumara, roast parsnip, honey glazed carrots, corn on the cob and homemade roast lamb gravy, homemade rhubarb pie for dessert

Lunchtime saturday here and tonight i am making mongolian beef, will serve on rice, got the meat marinating now

Monday here and tonight is pork chops and mac cheese

Marinate it for at least 2 hours in a combination of soy sauce,ginger,garlic,red capsicum,spring onion and brown sugar, comes out beautiful and tender

Hi Kayelle, Kumara is a vegetable grown here in NZ, it is very much like a sweet potato and comes in 3 varieties, red, golden and purple. They are lovely roasted,mashed or in salads

Greek Orange Roast Lamb with roast spuds,roast kumara,roast pumpkin,glazed baby carrots,peas,corn and of course homemade gravy. Still a bit warm for a roast but was craving one, roll on winter for all those comfort food meals:yum:
