Bread -- The Staff of Life

I just HAD to post this link to an article by my friend Pat Tanner. The Staff of Life - Bergen Health & Life - September 2011 - It's an article about the excellent artisan breadmaker, Nina White, of Boblink Dairy and Bakehouse in Milford, NJ. It underscores the many reasons why it's not really...

My mom is in the hospital

Oh Charlie, I'm so sorry to hear that! Sending prayers for your mom and you and all your family. These kinds of "accidents" that happen to our folks when they get older are so stressful for everyone concerned.

How to make dark chocolate candies?

Making chocolate candy is NOT too easy unless you make truffles. If you'd like a recipe for those, I'll be glad to post a great tnt one. Otherwise you will need to temper your chocolate. That's pretty easy to do, but messy and time consuming. And yes, you will need UNsalted butter.

It shouldn't as long as you fold the coloring in gently, the same way you did the egg whites.

What type of knife is best for chopping nuts?

I have a chef's knife that I reserve for chopping nuts and chocolate so my "good" knives won't get munked up. and for large quantities, I use the pulse button on my food processor.

    Normandy Style Mussels

$3.99/pound ??? That's highway robbery! Even at Whole Foods here, that 2-pound bag is $5.50. Margi, that recipe is killer. We love mussels, and I fix them every which way but fried because they're such a good value, and most of the ways to fix them are quite lo-cal. Since you started a...

Which Celebrity TV Chef is actually the BEST CHEF?

Jasper White is one of the best chefs anywhere, imho. We used to be neighbors when I lived in the North End. and although he is "famous" for seafood, and his wonderful Summer Shacks, he can cook me the dinner of his choice anytime. :yum: I think he is not more famous (nationally) because he's...

Which Celebrity TV Chef is actually the BEST CHEF?

I'm the opposite. Many of my books have stained pages, not to mention notes on how I modified the recipes right on the very page so I can remember for next time. I designed my book to have a solid spine but a spiral binding inside so the book lays flat. Otoh, when it's a coffee-table book, I...

What Totally Worthless (monetarily) Kitchen Tool Do You Love?

OHO! I know... I have two. One is the pickle picker I got at a Tupperware party eons ago. The second is the scoon (yes, you read that right: S-C-O-O-N!) that came in the Stewart's Coffee back in the dark ages, and which I still use to measure coffee for my pot.

    ISO White cake Recipe

If you want your cake to be light and tender, there is no substitute for folding in those beaten egg whites at the end! This recipe is the absolute best white cake I have ever eaten or made. A friend gave me this recipe SO many years ago, and I have shared it and shared it and shared it. It's...

Provencal Style Sea Scallops On Shell

Margi, they cost the earth without coral! Around here sea scallops go for anywhere between $18 and $25 per pound. And the Nantucket Cape Scallops (my personal favorites) can go even higher.:wacko:

    Pot Rack Use

I also ADORE my pot rack. It was custom made for me by a blacksmith in New Hampshire. At the time my place had 12 foot ceilings, so when I moved to my condo, he made new "hangers" for it to go with the much lower heights. In fact, my kitchen has a dropped ceiling. When my handy man installed...

My little boy had his tonsils out today

He's quite the trooper! I had mine out when I was 3 1/2. Back then you had to stay overnight in the hospital before and after. My lingering memory of the event was the unlimited strawberry ice cream with which I was indulged.

Provencal Style Sea Scallops On Shell

I'm lucky. I've gotten to eat scallops raw, just off the day boat, in both Boston MA and in Barnegat Light, NJ. But never one with coral. They are amazing in their brightness of flavor. Ever since then I only prepare them with a minimum of cooking and ingredients. and I never, ever bread them...
