    Thank you for the advice. While I have never attempted to make etouffe, I have utilized crawfish tails in my gumbo. They both seem OK with that. I think the "look" of a whole crawfish is what scares them off, which seems kinda weird to me since they both love whole lobster!

    USDA Flat Iron Steak

    Thank you all. I cooked it up tonight, shortly seared and then reduced the heat. I shot for 125 degf, based on what I read on line, but even after tenting for 15 minutes, it came out a bit to rare for my family. After reheating though, the tenderness and flavor was very good. Thank again.
