    normal electric vs infrared

    Hi, I am looking for an oven for a small scale bakery. I want to buy an electric oven, and I have 2 choices: The regular electric type (no convection) and the Infrared (no convection either) type. Can anyone who has baked in those 2 types advise me on which one is best to bake? Thanks, S.
