I'll be doing something with thighs, probably marinate in Goya Mojo, and grill them. Don't know what else yet.
Well, I decided not to grill in the dark, it's just depressing for this gal.
Instead, for the first time I used my new pyramid silicone mat in the oven for the marinated thighs. I got mine at BB&B. It worked perfectly at 400 "convection roast" degrees for 30 minutes. The sides were frozen fresh corn off the cob with butter for the Sous Chef, and zucchini steamed with garden tomato, onion, cheese and cilantro for both of us..
