I came up with this recipe looking to modify my standard oatmeal raisin cookie recipe to make it lower in sugar and healthier for dd. They're not sugary-sweet, but still have a hit of sweetness to them. You could bake them as cookies or bars, but I did bars since it's quicker and easier! the result is a moist, cake-like cookie bar.

(Since you only use 1/4 c of apple juice concentratein the recipe, and we don't drink apple juice, I poured rest of the can into an ice cube tray and re-froze for future baking. Each spot in my tray = about 1/8c.)


4 tablespoons butter, softened
2 tablespoons heat-stable sugar substitute equal to 3 tablespoons sugar
¼ cup egg substitute or 2 egg whites, lightly beaten
¾ cup unsweetened applesauce
¼ cup frozen unsweetened apple juice concentrate (thawed)
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt (optional)
1-1/2 cups oats (quick or old fashioned, uncooked)
1/3 cup raisins (could substitute chopped Craisins)

Generously spray 13x9" pan with cooking spray.

In large bowl, beat margarine and sugar until creamy. Add egg white; beat well. Add applesauce, apple juice concentrate and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.

Chill in refrigerator until firm, then spread into baking pan.

Bake in 350F oven for 20-25 minutes or until firm to the touch and light golden brown. Cool completely, cut to desired size and store tightly covered.
