Ingredients
1 tablespoon olive oil
2 tablespoons minced garlic
1 brown onion diced
1 x 400g diced tomatoes
2 teaspoons brown sugar
2 red chillis sliced
1/4 cup dried parsley
1 teaspoon dried dill
250g uncooked shrimp
200g feta cheese crumbled
Pinch of sea salt
Pinch of black ground pepper
Method
Preheat oven to 210c
Heat the oil in a large ovenproof frypan on a moderately high heat
Add onions and cook until soft
Stir in garlic and chilli and cook for about 20 seconds
Add tomatoes and bring to a simmer, allow to simmer for 5-10 minutes, until the juice thickens
Remove from heat and combine shrimp, herbs, feta, brown sugar, pepper and salt
Place pan in oven and bake uncovered until shrimp is cooked through, about 10-12 minutes.
Serve with pasta of your choice and crusty bread
