In our part of the world, the skin would be added to a big pot of white beans (great northern) and simmered, then eaten with cornbread. Good eats!!
That's how it's done in my house. We never have leftovers when I make a pot of them up. I personally don't eat the skin. I just like the flavor.
Sometimes I like to add a little maple syrup to my bowl.
It's not the same without cornbread.
