I made the chicken breasts, stuffed with goat cheese and dried cranberries, that we talked about last week. It was a big hit. Served it with jasmine rice and steamed spinach. No dessert yet. Maybe we'll come up with something. I forgot who told me about it, and I can't find the thread, but...

Watched The Insider with Al Pacino and Russell Crowe last night. I'd seen it and recommended it to my daughter. She liked it too. It's the kind of movie we have to watch when my son is gone. He likes movie with action and not "all talk talk" as he puts it. Such an eloquent child...

Rotisserie chicken from the store, cornbread dressing, sliced tomatoes and a fresh fruit salad. I'm happy that we have a fridge full of leftovers for weekday lunches. Love it when it works out that way!

Having a teenaged boy in the house means we never have leftovers. So, I'm lurking for ideas too. I'm considering grilled chicken breasts and some sort of fresh veg. And a big salad for me. I'm feeling fat and overfed from the holidays.

We have ground bison on hand, too. Making chili in the crock pot. Rain days and below freezing temps are made for tortilla chips and crock pot chili.

I need to make the stuffed peppers I've been procrastinating about since Sunday. But it's cold and wintry here, and Green Eggs with Ham [scrambled, with basil and/or oregano] and garlic toast sounds so much yummier.

The heck with shipping me spaghetti sauce....that I can do myself. Somebody ship me a handyman who'll clean my house! :wink:

I guess I'm making chili, too. We have all the fixins and anything that'll keep me outta the store after work is what I'm willing to make!

I made tortilla soup last night so it should be perfect today. Add avocados, cheese, chips it's a real meal!

Breakfast for dinner tonight. Pancakes with berries, scrambled eggs, turkey sausage and orange juice. But, I'd rather go have dinner at Getoutamykitchen's. That sounds awesome.
