One of my favorite plaintain dishes from when I lived in Mexico was when they would fry a plaintain til it was soft and could be mushed. They would cut up chunks of cheese, usually mozzerella and 1" cube, and mold the soft plaintain around the cheese and fry them again. It was wonderful.
