    split roasting In South Texas and Mexico I have see Cabrito (young goat) roasting over hot mequite coals the carcas is skewed on metal rods . The rods are bent in a angle over the fire pit . the cabrito is roasted over the hot coals . The meat is very tender and tasty.

    wood chips I use to give my next door neighbors Daughter a box of seasoned mesquite wood . I would split the wood into small sticks 10-12 inches long and 1/2 inch wide. She would take them back to Colorado and she and her husband would use them in their smoker.:smile:
