Hi, I would like to introduce myself

Cool. I am guessing the 'pancakes' are boiled or poached? The ones I had were very shiny, almost like a bagel, but much softer and also sweet. Help! My girlfriend wants me to learn to make them! Thanks, Irland

Hi, I would like to introduce myself

Hey Xiao, I am new here too! I went to a great Chinese place in Denver the other night hoping to get some dimsum, but missed it. I wound up getting a delicious Peking duck which was served with these amazing little soft poofy bread things, they were kinda sweet. What is the name of that...

    Health and Bananas

The best banana muffin recipe I tried used some sour cream, orange zest, mini chocolate chips, and of course, pureed banana. They were easily the best muffins I've had in my life. 1 c flour 3/4 t baking powder 1/2 t salt 5 T butter 1/2 c sour cream 1 banana 1 t orange zest 1/2 c sugar 1/2 t...

    Jambalaya!

When I cook jambalaya I like to toast the rice in some oil for like 20 seconds, as if you were making Spanish rice except only about 1/2 or less of the effect. I like the texture that it adds to the rice, but do not over-toast it!

    Fried Calamari

I had some squid at a Japanese place in LA that was pretty tasty, and I kind of impressed myself at how well I mimicked their recipe: Clean small squid (~5" head) and cut into rings Do the flour egg flour bit Your second dredging of flour should contain lots of salt and a little cayenne or...

    ISO Scandinavian recipes

Kottbullar is Swedish meatballs! Can't believe they haven't been mentioned yet. Gravlax can be pretty tasty - take a salmon fillet and coat it thoroughly with salt and brown sugar, wrap it and let it sit in the fridge for a few days. Rinse it off and slice it paper thin on a bias and you're...

    Need to use up grits

Grits yum! I eat grits for breakfast 3 times a week, my girlfriend is Filipina and it reminds her of lugao. I cook my grits thoroughly, as I like them smooth and creamy with no bite to it at all. Add some parmesan cheese and salt to taste. I usually dump in some sunflower seeds too, and a...

    Mousse Problems

I made a cherry mousse last night, or attempted to. It has had about 16 hours to cool and is not set. I think the problem was in my egg whites. I was whipping them over a hot water bath and was interrupted for moment, and when I came back my foam was broken. I was out of eggs so I tried to...
