Geneva cookies really don't taste like shortbread at all to me. They're much crunchier/more stiff. They remind me more of Biscoff cookies in both taste and texture. If I were going to mimic them I'd use a recipe for Biscoff cookies, which are readily available around the interwebs. Here's one...
