    What's for dinner May 3rd?

I'm cooking ahead for Cinco de Mayo, so I had two crockpots running today one with pork for shredded pork enchiladas and one with spicy pinto beans. So, tonight I taste tested and adjusted the seasonings. Tomorrow I will fry up some rice and make the enchilada sauce. After partying on...

How heavily your beans are seasoned with other seasonings will play the largest part in how much of...

Spice up my black beans and rice

I season my black beans with onions, green peppers (your choice of kind), garlic, celery (optional), Mexican oregano and cumin. Sweat the above mixture and then add the black beans. If I'm in a hurry I use instant rice, mixed one cup of rice, one tablespoon of Lipton's Onion Soup mix and one 8...

    What's cooking Monday February 1, 2010?

I had a busy day with little time left for cooking, so I raided the pantry and put together what I call Pasta Putanesca al Tonno. The hardest part was opening 3 cans with a crummy can opener.

    Hello all--Newb on board

I like to play with food. Over the years I have graduated from playing with mashed potato castles and green bean cannons to playing with Dutch Ovens, sauté pans and pressure cookers. Still, if no one else is around, mashed potatoes and green beans on the same plate present a huge temptation. I...
