Grilled chicken thighs, sweet/hot sausage ..

If you got any tortilla, toss them on a grill to make them crisp. Julien (slice very thin) 2 red or green bell peppers. Keep the skin on or off, up to you. Fry the peppers, or grill them as a whole then cut them up, and fry up the onions. Put it in a bowl, add some capers and vinegar the capers...

What cooking method yields tender chicken breasts?

Cutting the chicken breasts (if boneless) into strips and tossing them into a broth or soup makes them amazingly tender. If it's on the bone, cut away the chicken far from the bone, put it with a broth or soup and the meat near the bone, don't muddle with it, just put it in as is. Slow cook it...

    What is brown seasoning sauce?

My parents purchased Weigh****cher's cookbook called "New Complete Cookbook". There's no brown seasoning sauce anywhere in there. However, saying that is meaningless as there are probably many. In the basics, or sauces section, the book has nothing like that. Is there an introduction to the...

    Worst Kitchen Accidents!

For me, everytime I cook, something falls, my doing or not, it just falls. Knives, something hot or cold, clean or dirty. Usually some food hits the ground and my dog has a feast, unless it's bad for him so I chuck it out. Anyways, they're ordinary. So, now knowing me and keltin are well klutzes...

    Question about flour for cakes

So WW is just for added nutrition? Cake flour does sound good, but I don't want to mess around with recipes from a good cookbook. I've done that in the past with pudding and it turned out to have a better use as concrete than food.

What's your favorite brand of chocolate?

Semi-sweet chocolate chips are simply amazing to eat out of the bag. It's even better to toss some in a dish, add a tbsp of H2O, several tbsp and a little more of brandy, cinammon and 1/2 tsp or so of ground cloves. Put in a microwave for about 2 minutes Take it out at 1 min, stir it. Add a...

    Question about flour for cakes

I've been making cakes and used only all-purpose flour. My question is, for many recipes, why do they call for whole-wheat and all-purpose, same quantities for both? I've made it with only all-purpose and they've been fine but is there something I'm missing? Does the combination of flours make...

What do you consider the single most useful kitchen gadget?

For me, a tie between a nice knife and a large pot. You can use a pot over a camp fire or grill, so a stove isn't up there. Without a knife, what can you do? Use an axe to chop an onion finely? Without a pot, there's no where to put the food to be cooked. It cant be heaped on a pile of wood to...

Why Do Restaurants Use Cheap Looking Pans?

As long as it works regardless of its appearence, I don't see why it should matter. If it's an old, 15 year old pan that looks rather dingy yet cooks amazing, why toss it out for something that cooks just as good but is shiny?

    Thermometer....

I like to cook chicken on the BBQ. To know if it's done, there should be some grey (cooked colour) spreading to the top. If you lift it off the grill, the bottom should be firm. Give 1 more minute or so, then flip. Check the firmness on both sides to be sure, add about 1 minute then serve. I use...

    Food allergies

Whether or not doctors believe in food allergies I do. I've studied biology, more specific, human anatomy in high school. I'm studying it in university, so I for one, know allergies are real. There's a "new science", a load of crap, which basically is hooking you up to a large battery, turning...

    Burgers on Cast Iron Skillet

I never use eggs. I use bread crumbs, put some spices then use some milk, just enough to make the crumbs soggy. Then I squeeze it over and over, adding in milk until it's a slurry and all milk is absorbed. Then I dice up onions, ground meat, s&p, hot sauce, cayenne pepper flakes and a little...
