    Spread the tortilla with red pesto, sprinkle with cubed cooked chicken & rocket. Top with a mixture of mozarella & grated cheese. bake 10 minutes. A new recipe of mine - hope you enjoy!

    Red Pesto Salmon

    It was shop bought, so sorry, only know from ingredient list (will try & make it though!!) Its based on tomato with pine nuts, basil. This recipe would work equally well with regular basil pesto.

    On one visit stateside, teh service was appaling so no I didn't tip & the waitress had a stand up row & no I didn't back down, However, i did eat at a Ramsay restaurant yesterday (new one in Versailles) and both the food & service were a credit to his empire!

    Anyone ever cook a Capon?

    Capopn is very popular in France. I just cook as for chicken & make sure I let it rest before serving. I always stuff 2 halved lemons in the cavity & perhaps fresh bay & garlic. I like it because the chickens here are so tiny!!

    Tahini

    I have a jar of Tahini sat in the fridge - bought to make hoummous. Made it & still best part of the jar sat in the fridge! Does anyone have further ideas of how to use tahini? I love the flavour but have never experimented with it. Thanks.:chef:

    I'm thinking of making a tortilla pizza with the chicken breast or perhaps stuffing with Boursin garlic cheese & wrapping in Serrano ham. Any better ideas would be gladly appreciated. I always buy a tray then spend the next few days of trying to come up with more imaginative ways of serving it!
