Anyone with experience brining a turkey?

I've recently heard a lot of people talking about brining as a preparation for turkeys. Does anyone have a brine recipe or method for doing this? Thanks!

Anyone familiar with the Big Green Egg?

I bought one of these for my Dad probably ten years ago. It takes awhile to get used to controling/ maintaining the temperature - but being ceramic it seriously holds the heat. (Also - it weighs A LOT so don't give yourself a hernia moving it around). A friend of mine uses it...

    Good Eats Drinking Game

The Grinch Not to get sidetracked... but the best drinking game ever is one that's played while watching "The Grinch that Stole Christmas". The original 30 minute cartoon version with Boris Karloff narrating... Rules are simple: 1) Drink every time the word "Who" is mentioned. 2) Finish an...

    Oyster Bisque - Seeking Recipes

Recently found this oyster bisque recipe below... doesn't really blow me away - does anyone have any other bisque recipes?? Oyster Bisque Recipe - first boil 1 quart oysters in their own liquor with about 1 pint mildly-flavored white stock. Let boil for 1/2 an hour or even longer. Take up and...

Ironchef - impressive input. Thanks for all the ideas... Could you give a bit of detail in the shrimp infused oil? Gracias!

    A shrimp question on deveining

At the majority of shrimp boils or 'boils' with shrimp included that we do in the Lowcountry of SC - shrimp are rarely deveined. Granted, the larger a shrimp gets the more pronounced the vein may be, but it has never seemed to be an issue. I mean - if you want to get picky on the 'entrails'...

    Uses for sea food stock

To follow the last comment, etouffees or jamabalayas are great uses for seafood stock. Also - a nice risotto can be perked up with seafood stock as a base.

    GRILLED CATFISH IN CORN HUSKS

Interesting recipe. What does the wet husk do to the catfish? I am guessing a sort of steamed consisteny. Am I correct? Also - I am guessing you could potentially fill the husks with spics as well.

No - it is not non-stick. It's the anondized stuff. (Gulp)

    Calphalon HELP

So - a Calphalon pot was left on the stove with a pot of rice and it basically burned the rice to oblivion. Burned in big time. Anything I can do to save the pot or just chunk it?

See the movie "Supersize Me" if you already haven't. Great documentary and a pretty ugly indictment of McDonald's as well!

    Haggis

I agree completely - the reason I was using quotes was because I thought it would be evident the phrases were sattirical. Yes - I laugh at everything we stereotypical Americans eat as often as I can. I also enjoy a good laugh at both my own and at other's expenses. Life is too short to worry...

    Haggis

It was a joke... about Haggis no less. Relax. I spent a week in Edinburgh and I have to say it was one of my favorite trips of all time. The people there are possibly the most hospitable and nicest of any country I've visited. Stayed here: (just outside of Edinburgh)...

Yes it is - I meant to credit Mike Myers for that gem.

    Le Creuset label removal

The label on mine was on the bottom and I inadvertently left it there before I used it. They must be made of some sort of futuristic fireproof material  , because it was barely singed. So - with that said... mind will stay.

Steamer/ Fryer - Ever seen anything like these?

Kitchenelf - Haven't thought of the 'storage implications'. Very nice! The small one, could possibly sit on a counter... but at 185,000 BTUs the amount of steam it put out would probably have the wallpaper peeling in no time (we've added pics to the site)...

    Tsai Beat Flay......

I agree on how pompous Flay is. But I do have to say when he went up against Rick Bayless he really showed some versatility. I think he's as interesting to watch as bologna on the grill... and he comes across pretty degrading to the small town cooks he encounters on Foodnation... (I was...
